Brassica oleracea var. palmifolia

Dinosaur Kale (Lacinato Kale / Cavolo Nero) is one of the most popular and widely cultivated kale varieties in the world. Also known as Tuscan Kale, its name is translated from Italian “cavolo nero”, meaning black cabbage. This heirloom variety stands out with its dark bluish-green, almost black leaves, which are deeply textured and embossed — giving it a prehistoric appearance, hence the nickname “Dinosaur Kale.”

Unlike curly kale, Lacinato kale has long, flat, strap-shaped leaves with a bumpy surface, adding a unique texture and colour to your dishes. It’s a versatile vegetable that’s perfect for fresh salads, sautés, and hearty soups. For best results in soups, add the leaves at the end of cooking to preserve their flavour and texture.

Originating from Tuscany, this ancient kale variety has been cultivated for centuries and remains a favourite among home gardeners and chefs alike for its rich flavor, nutritional benefits, and striking appearance.
