Red Amaranth is an extremely popular leafy vegetable (amongst several from the Amaranth family) that is commonly called Taambadi Bhaji or Laal Saag/Bhaji in different parts of the western coastal belt in India.
Its has gorgeous deep red leaves, and is tolerant to hot weather make it one of the most popular and versatile of indigenous greens. It features as an ingredient in several traditional dishes and is highly under-rated for its nutritional qualities.
While it is direct-sown by many gardeners, we've found that transplanting allows better spacing and leads to greater productivity. Can be grown well in beds or containers.
Red Amaranth is great for kitchen gardens even when other varieties like palak / spinach struggle, the leaves can be cooked, stir-fried or even eaten raw (younger tender leaves).
